Ingredients
- 1 3/4 cup all purpose flour
- 3 tablespoons packed light brown sugar
- 2 1/4 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 8 dried dates, chopped
- 6 dried apricot halves, chopped
- 1 egg
- 1 very ripe banana
- 1/4 cup fat free milk

Step 1
Preheat the oven to 350. Spray an 8x4 loaf pan with nonstick cooking spray.
In a medium bowl, combine the flour, brown sugar, baking powder, salt and cinnamon; stir in the dates and apricots. In a small bowl, beat the egg; add the banana and milk. Pour over the flour mixture; stir just until blended (do not over mix).
Transfer to the pan. Bake until a toothpick inserted in the center comes out clean, about 1 hour. Cool completely on a rack.
Per serving: 111 calories, 1 g total fat, 18 mg chol, 174 mg sodium, 24 g carb, 1 g fiber, 3 g protein, 49 mg calcium.
