Ingredients

  • Cake:
  • 1 Cup Oil
  • 2 Cups Sugar
  • 4 Eggs
  • 2 Cups Plain Flour
  • 1 tsp. Salt
  • 2 tsp. Cinnamon
  • 2 tsp. Soda
  • 2 tsp Baking Powder
  • 1 Cup Nuts - Pecan or Walnuts (I prefer Pecans)
  • 3 Cups shredded or grated Carrots (I like the bags of already shredded carrots)
  • Icing:
  • 1/2 Stick to 1 whole stick of butter (room temp)
  • 1 package cream cheese (room temp)
  • 1/2 box powdered sugar (use more if desired)
  • 2 tsp Vanilla

Preparation

Step 1

Cake:
Mix all together. Pour in large pan. Bake 1 hr— 300-350 degrees

Icing:
Beat in mixer until fluffy. Put on cool Cake.
