Ingredients
- Cake:
- 1 Cup Oil
- 2 Cups Sugar
- 4 Eggs
- 2 Cups Plain Flour
- 1 tsp. Salt
- 2 tsp. Cinnamon
- 2 tsp. Soda
- 2 tsp Baking Powder
- 1 Cup Nuts - Pecan or Walnuts (I prefer Pecans)
- 3 Cups shredded or grated Carrots (I like the bags of already shredded carrots)
- Icing:
- 1/2 Stick to 1 whole stick of butter (room temp)
- 1 package cream cheese (room temp)
- 1/2 box powdered sugar (use more if desired)
- 2 tsp Vanilla

Preparation
Step 1
Cake:
Mix all together. Pour in large pan. Bake 1 hr— 300-350 degrees
Icing:
Beat in mixer until fluffy. Put on cool Cake.
