Mom's Potato Salad
My mom makes the simplest but most delicious potato salad. Here are the tricks of the trade.

Ingredients
- 5-7 medium potatoes
- 6-8 boiled eggs
- 3-5 TBS Creamy French Dressing
- Mayonaise-2-3 serving spoonsful
- Mustard-1-2 TBS
- Salt-to taste
- Pepper-to taste
- Paprika

Preparation
Step 1
Peel and cut potatoes into bite sized pieces. Boil in generously salted water. It is hard to get enough salt after the fact so don't be stingy with the salt.
While potatoes are boiling, boil eggs.
After potatoes are just a touch al dente, drain and cool. If you try to compile the salad while potatoes are hot you will end up with mashed potato salad.
Cool and peel the eggs, set 2 aside to slice for garnish. Chop the others and add to the potatoes.
Mix in Creamy French Dressing, Mayo, Salt, Pepper, and mustard.
Slice two eggs and arrange on top of salad and sprinkle with paprika. Chill.
