Ingredients
- 10 oz. fresh spinach (baby spinach works well)
- 1 pint grape tomatoes
- 2 packages cream cheese
- 4 cloves of garlic
- 1 package shredded monterey jack cheese
- Olive oil
- Basil

Preparation
Step 1
Remove large stems from spinach. Cook spinach down in a frying pan with a little olive oil. Halve the grape tomatoes drizzle with olive oil and basil and roast in a 400 degree oven for 30 minutes. Chop cooked spinach coarsely and combine with garlic, tomatoes and cream cheese. Spread in an small casserole dish and top with shredded cheese. Bake at 350 degrees until cheese melts.
