Peach, Chocolate and Cherry Upside Down Cake

This is a recipe given to me by a high school classmate in Buffalo, New York in 1966. It is so delicious!

Ingredients

  • Topping
  • 3 tbsp butter
  • cherries, either fresh, frozen or canned i
  • peaches sliced, either fresh, frozen
  • 2/3 cup brown sugar
  • 1/2 teaspoon cinnamon
  • Cake
  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg
  • 1-1/2 cups flour
  • 1/2 cup cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1/2 cup boiling water
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Preparation

Step 1

Topping
Melt butter, brown sugar and cinnamon in a 9 by 12 baking pan. This can be accomplished by placing the pan of ingredients in the oven during the pre-heating stage.
Arrange the sliced peaches and cherries in a decorative fashion over the melted ingredients.
Cake
1. Cream butter and then add sugar and beat until combined and fluffy
2. Add the egg and beat well to incorporate
3. Sift dry ingredients together and add alternately with the milk and vanilla and beat until combined
4. Stir in the boiling water.
5. Pour the batter evenly over the topping and bake in a 350 degree oven for 50 minutes.
