Cinnamon Sugar Pumpkin Bites

A taste of fall in these bite-sized treats! A pumpkin muffin with a topping of cinnamon sugar. It goes great with a cup of coffee or tea!

Ingredients

  • 1

    + 3/4 C all-purpose flour

  • 1

    + 1/2 tsp baking powder

  • 1/2

    tsp salt

  • 1

    tsp ground cinnamon

  • 1

    tsp pumpkin pie spice

  • 1/2

    stick (1/4 C) unsalted butter, melted

  • 1/2

    C dark brown sugar

  • 1

    large egg

  • 1

    tsp vanilla extract

  • 3/4

    C pure pumpkin

  • 1/2

    C milk

  • Cinnamon-Sugar Top -

  • 1/2

    stick (1/4 C) unsalted butter, melted

  • 1/2

    C granulated sugar

  • 1

    tbsp ground cinnamon

Directions

1. Preheat oven to 350 degrees F. Spray a mini muffin pan with nonstick spray. 2. In a large bowl, combine the flour, baking powder, salt, cinnamon and pumpkin pie spice. 3. In a medium bowl, whisk together the melted butter and brown sugar. Whisk in the egg until fully combined. Add the vanilla, pumpkin, and milk. Pour the wet ingredients into the dry and stir until it's just combined. 4. Using a small scoop or spoon, fill the muffin tins. Bake for 12 minutes or until a toothpick inserted in the middle comes out clean. 5. For the topping, melt the butter in a bowl. Combine the cinnamon and sugar in a separate bowl. Once the muffins are slightly cooled, dip them in the melted butter and then the cinnamon-sugar mixture. Enjoy!
