Roasted Broccoli with Cumin-Chipotle Butter

Ingredients
- Pam non-stick cooking spray
- 1 – 1 1/2 pounds broccoli florets, washed with very little stalk
- 3/4 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground chipotle powder (Mrs. Dash makes this, in spice aisle)
- 1/4 teaspoon sugar
- 5 teaspoons unsalted butter

Preparation
Step 1
1. Preheat oven to 450o F. Spray a baking sheet with Pam non-stick cooking spray.
2. In a large bowl place broccoli florets
3. In a small glass (i.e., shot glass is perfect size) combine salt, cumin, chipotle powder & sugar
4. In a small skillet melt butter over medium heat
5. Add dry spices to melted butter and cook for 30 seconds
6. Pour butter mixture over broccoli
7. Toss with spatula
8. Place vegetables on prepared baking sheet and bake for 12 – 15 minutes.
PER SERVING (¼ of vegetable): 74 Cal, 5 g Fat, 3 g Sat Fat, 0 g Trans Fat, 13 mg Chol, 468 mg Sod, 6 g Carb, 3 g Fib, 3 g Prot, 55 mg Calc.
