Ingredients
- DOUGH:
- 2 sticks unsalted butter, softened
- 1/2 cup sugar
- 2 large egg yolks
- 1 tsp vanilla
- 2 1/2 cups flour
- 1 tsp salt
- FILLING:
- 1 cup sugar
- 3/4 tbs flour
- 3 large eggs (room temp.)
- 1 tbs finely grated lime zest
- 3 tbs fresh lime juice
- 1/2 tsp salt

Preparation
Step 1
1. Dough: Cream butter and sugar until pale and fluffy. Add yolks and vanilla and beat for one minute. Beat in flour and salt. Cover and refrigerate for about 1 hour.
Preheat oven to 325F.
2. Filling: Combine sugar, flour, and eggs in a medium bowl. Stir in lime zest, juice, and salt.
3. Roll balls using 2 tsp of dough. Place one inch apart on baking sheet. Using a wooden spoon, press indentation in center of each ball. Bake at 325F for 10 minutes.
4. Spoon filling into centers and bake cookies for another 6-8 minutes.
