Black Berry Jam Cake

Ingredients

  • 1/2 cup butter
  • 1/2 cup vegetable shortening
  • 2 cups sugar
  • 1 cup blackberry seedless jam
  • 5 eggs
  • 3 cups flour
  • 1/2 teaspoon soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 cup buttermilk
  • 1/2 cup nuts, chopped

Preparation

Step 1

Mix butter and sugar and beat until light and creamy. Add jam and mix well. Add eggs one at a time, beating well after each. Sift dry ingredients together and add alternately with milk. Pour into a greased and floured tube pan and bake at 300° for about 1 hour and 15 min., or until done.

You may substitute 1/2 cup brown sugar for the 1/2 cup white sugar and use black walnuts.

Glaze

3/4 cup sugar
1 half stick butter
1/2 cup water
1 teaspoon rum flavoring or vanilla

Mix together in a small saucepan and bring to boil. Boil for two or 3 min. and pour over cake in pan while hot. Let cool in pan.
