Shrimp Won Ton Soup

Ingredients
- 1/4 c. sliced green onions
- 1 Tbs. water
- 2 tsp. cornstarch
- 2 tsp. lemon juice
- 1 1/2 tsp. dark sesame oil
- 1 tsp. grated peeled fresh ginger
- 1/4 tsp. sugar
- 1 lb. medium shrimp peeled and deveined
- 1 8 oz. can sliced water chestnuts, drained
- 36 won ton wrappers 1 eggs white lightly beaten
- 3 c. water
- 2 14 1/2 oz. cans Oriental broth
- 1/4 c. 1/2 in. diagonally sliced green onions

Preparation
Step 1
place first 9 in food processor and pulse 6 times
working with 1 won ton wrapper at a time, cover remaining with damp towel, spoon 1 Tbs. shrimp mix into center of wrapper
moisten edges of wrapper with egg white and bring 2 opposite corners together and pinch to seal, moisten bottom 2 points and bring together and pinch to seal
repeat
combine 3 c. water and broth in lg. dutch oven, boil
stir broth mix while adding won tons until tender
ladle soup into bowls, add 6 won tons, sprinkle with sliced onions
