Ingredients

  • 1 cup milk
  • 1 Tbsp cider vinegar
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup butter, softened
  • 1/4 cup vegetable shortening
  • 1 1/2 cups sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 cup canned pumpkin
  • Confectioners’ sugar for top of cake

Preparation

Step 1

1.Preheat oven to 350 degrees.

2.Coat a 9 by 13-inch baking pan with cooking spray.

3.In small bowl, combine milk and vinegar. Set aside for 5 minutes.

4.In medium bowl, stir flour, baking powder, baking soda, cinnamon, and nutmeg.

5.In large mixing bowl, beat butter and shortening on medium for 1 minute. Add sugar and vanilla and beat for about a minute. Add eggs, one at a time, and beat well after each.

6.Add one third of the milk, and one third of the flour mixture. Beat well. Add another one third of milk and flour and beat for 1 minute. Add rest of milk and flour, along with pumpkin, and beat well.

7.Spoon batter into pan. Bake for 35 to 40 minutes, or until done.

8.When cake is cool, sprinkle top with confectioners’ sugar.
