Ingredients
- 2 lbs. red potatoes peeled and cut into pieces
- 1/4 c. extra virgin olive oil
- 1/2 c. chopped red onion
- 12 c. chopped red bell pepper
- 1/2 c. lemon juice
- 3 Tbs. oregano
- 2 Tbs. chopped mint
- 2 tsp. salt
- 3/4 tsp. ground black pepper

Preparation
Step 1
steam potatoes 10 min.
add oil to potatoes, toss
mix in onion, pepper, lemon, oregano, mint, salt and pepper
cover and chill
let stand room temp. 1 hr before serving
