Sweet Potato Dip

Tastes just like sweet potato pie! Serve with baked pita chips and apple or pear slices. Swap cinnamon for the ginger if you prefer.
*If you roast the sweet potato, you’ll bring out its natural sweetness. But you can steam, boil, or microwave the potato before you mash it, if you prefer.

Ingredients
- 1 1/2 cup(s) canned chickpeas, loose skins removed, washed, drained
- 1 cup(s) cooked sweet potato, mashed*
- 1/4 cup(s) packed light brown sugar
- 1/2 cup(s) fresh orange juice
- 1 tsp orange zest, finely minced
- 1 tsp ginger root, fresh, finely minced

Step 1
Combine all ingredients in a food processor or blender; blend until smooth. Allow to set up in refrigerator for about 30 minutes. Yields about 2 tablespoons plus 2 teaspoons per serving.
