All American Apple Pie

  • pie dough
  • 2 cups sifted flour
  • 2/3 cup shortning (room temp)
  • 1/4 cup chilled water
  • 1 tbsp chilled water
  • pinch of salt
  • filling
  • 7 baking apples, cored and sliced
  • 3 tbsp sugar
  • 3 tbsp brown sugar
  • 1 tsp cinnamon
  • 2 tbsp sifted cornstarch
  • 1 tbsp grated lemon rind
  • 1 tbsp lemon juice
  • beaten egg



Step 1

preheat oven to 400 f

pie dough

resift flour with salt into large bowl.
add shortning and, using pastry blender, incorporate until mixture resembles oatmeal.

add both measures of chilled water and form dough into ball. wrap in waxes paper and refrigerate 1 hour.

before using, remove dough and let stand 1 hour at room temp.

cut dough in half. flour board and rolling pin: roll out half of dough and line 9 inch pie plate. set aside


place apples, boyh type of sugars, cinnamon, cornstarch, lemon rind and lemon juice in bowl: toss together and pack into prepared shell. dot apples with butter.

roll out other half of dough. moisten edges of pie shell with water and carefully lay pie crust on top. pinch edges shut and make several slits with small knife in upper crust.
brush dough with beaten egg and place in oven:

bake 40 to 45 minutes
serve plain or with ice cream
