Ingredients

  • 1 Tbs. vegetable oil
  • 1/3 cup coarsely chopped green pepper
  • 1/3 cup sliced celery
  • 1/4 cup chopped onion
  • 1 16 oz. can tomaotes in juice, chopped
  • 1/2 cup water
  • 1 bay leaf
  • 2 Tbs. chopped parsley
  • 1/2 tsp. dillweed
  • 1/8 tsp. each of salt, pepper, and Tabasco sauce
  • 1/2 lb. fresh shrimp, peeled and de-veined

Step 1

In a medium saucepan, heat oil over medium-high heat. Add green pepper, celery and onion, stirring about 6-8 minutes until veggies are soft. Add tomatoes with juice, water, garlic, bay leaf, parsley, dillweed, salt, pepper and Tabasco. Bring to boil. Reduce heat; cover and simmer 30 minutes, stirring occasionally. Add shrimp and cook until pink, about 3 minutes. Remove and discard bay leaf.
