Spinach Salad with Cranberries & Pine Nuts

  • 2 TBSP fresh orange juice
  • 1 tsp. balsamic vinegar
  • 1 tsp. dijon mustard
  • 3 TBSP extra-virgin olive oil
  • Salt and pepper, to taste
  • 6 oz. package Baby Spinach leaves
  • 2 TBSP dried cranberries
  • 3 TBSP pine nuts, toasted

Step 1

Make the dressing ingredients by whisking together in a small bowl the orange juice, balsamic vinegar, dijon mustard, olive oil, salt and pepper. Set aside

Put baby spinach in a large bowl. Wait until the last minute to pour dressing over, tossing slightly before serving.
