Ingredients

  • Icing:
  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 2 eggs
  • 20 ounce can crushed pineapple with juice
  • 1 cup chopped pecans
  • 1 stick butter, softened
  • 1-8 ounce block cream cheese
  • 2 cups confectioners sugar
  • 1 tablespoon vanilla

Preparation

Step 1

Cake:
Mix the dry ingredients. Add in eggs, pineapple and the pecans. Stir just until moistened. Pour into a 9x13-inch pan. Bake in a preheated 350 degree oven for about 30-35 minutes or until toothpick comes out clean. Cool completely.

Icing:
Combine the cream cheese, butter, sugar and vanilla. Beat until smooth. Frost cake using all the frosting.
