Ingredients

  • 1/2 cup fresh lemon juice
  • 1/4 cup EVOO
  • 3 garlic cloves, minced
  • 1 shallot finely chopped
  • 1 t brown sugar
  • 1/2 t crushed red pepper
  • 1 t ground cumin
  • 1 t chili powder
  • Kosher salt
  • 2 lbs. boneless chicken thighs

Step 1

Start grill. Combine first 8 ingredients and 1 t kosher salt in a large bowl; add chicken and marinate 15 minutes or more. I did more.

Remove chicken from marinade and discard marinade. Grill chicken 5 minutes on each side til done.
