Ingredients

  • Cake:
  • 1 1/2 C vegetable/salad oil
  • 2 C sugar
  • 4 eggs
  • 2 t baking powder
  • 1 t baking soda
  • 1 t salt
  • 7-8 grated carrots
  • 3 C flour
  • 1 t vanilla
  • 1/2 chopped nuts
  • Frosting:
  • 1 6-8 oz pkg of cream cheese
  • 3/4 stick of butter (3/4 C)
  • 1 T cream or milk
  • 1 t vanilla
  • 4 C powdered sugar

Preparation

Step 1

Cake:

Preheat oven to 350 and grease cake pan(s)

Combine all cake ingredients except 2 C of the flour mixing well, then add the final 2 C flour and combine. Pour batter into prepared pan and bake for 1 hour or until tooth pick inserted comes out clean.

Allow to cool before frosting.

Frosting:

Cream ingredients until desired consistency adding a little extra powdered sugar if necessary to thicken or a little more cream or milk to thin if too thick.
