Strawberry Glazed Chicken Thighs


Strawberry glazed chicken provides a sweet and fruity glaze with the fresh basil undertones. Serve with a side of rice and stir fried veggies.

  • 8 chicken thighs, bone in and skin on
  • Salt and pepper, to taste
  • Paprika, to taste
  • Olive oil
  • 1 tablespoon strawberry jam
  • 2 sprigs fresh basil, chopped
  • 2 cloves of garlic, crushed and chopped
  • 1/2 lemon, juiced
  • Zest 1/2 lemon
  • Salt and pepper, to taste
  • 1 teaspoon cider vinegar

Step 1

Preheat oven to 350°F.

Combine all ingredients for glaze, mixed well and set aside.

Clean chicken thighs, pat dry and lay out on a baking pan. Sprinkle salt, pepper and paprika over each thigh and drizzle about 1/2 teaspoon olive oil over each chicken thigh.

Bake chicken for about 30 minutes. Take out of the oven and brush each thigh with glaze. Place back in the oven and let finish cooking for at least 10 more minutes, or until juices from the chicken are running clear.
