Baked eggs with olives

  • 2 eggs
  • 2 T heavy cream
  • 4 green olives - pitted and sliced
  • 1/8 t salt
  • black pepper to taste
  • 3 T toasted bread crumbs (homemade or store bought bread crumbs)

Step 1

Preheat oven to 375. Crack eggs into a small casserole dish or individual gratin dish being careful not to break the yolk. Drizzle the cream over the eggs and sprinkle with olives, salt and pepper. bake about 7 minutes until whites are set and yolks are still very loose. (It will continue to cook a bit after removed from the oven) sprinkle the top with bread crumbs. Serve warm.
