Skillet Roasted Potatoes with Garlic and Herbs

Ingredients
- 1 lb. baby (small) potatoes, cut in half
- 1 Tbsp. unsalted butter
- 2 Tbsp. water, divided
- 2 cloves garlic, minced
- 2 tsp. fresh herb of choice (rosemary, basil, thyme, sage)(Or use dried)
- 3/4 tsp. salt
- 1/4 tsp. black pepper

Step 1
Melt butter in large heavy skillet over medium heat. Add potatoes and 1 Tbsp. of the water, and stir to coat. Reduce heat to low and cook, covered, stirring occasionally, for 15 minutes. Add remaining 1 Tbsp. water and cook, stirring occasionally, until potatoes are tender and well browned, about 15 minutes longer.
Sprinkle potatoes with garlic, rosemary, salt and pepper. Cook, stirring, until fragrant, about 2 minutes longer.
