Vanilla Roasted Peached with Raspberries

Ingredients

  • 2 tbsp unsalted butter, melted
  • 2 tbsp fresh lemon juice( from 1 lemon)
  • 2 tbsp sugar
  • 1 vanilla bean,halved lenghtwise and scraped or 1 tsp pure vanilla extract
  • 4 firm, ripe Peaches ( 1-1 1/2 pounds total)
  • 1 pint vanilla ice cream
  • 1 package(5-6oz) fresh raspberries(optional)

Step 1

1. Preheat oven to 400. In a large shallow baking dish, combine butter, lemon juice, sugar and vanilla (if using a vanilla bean-add seeds and pod). Add peaches and turn to coat with butter mixture;arrange cut side down in a single layer.
2. Roast until peaches are tender and cooking liquid is sryupy 15-25 minutes, brushing with cooking liquid halfway through. Serve peaches( warm or at room temperature) with vanilla ice vream and raspberries if desired; drizzle with cooking liquid
NOTE: If the cooking liquid in the bottom of the pan is too thick to drizzle, whisk 1-2 tbsp warm water to thin
