Grilled Kielbasa Packets

I love to make these. Not only are they simple to prepare with your meal all in one package, but they are simple to cook too - and the taste is WONDERFUL! The onion seems to add incredible flavor to the potatoes and carrots. Everyone who's eaten these think they are delicious!

  • Kielbasa
  • Potatoes
  • Carrots
  • Onions
  • Non-stick Cooking Spray
  • Butter
  • Salt and pepper to taste

Preparation

Step 1

In large squares of heavy duty (or doubled) foil sprayed with PAM to eliminate sticking, layer the thinly sliced potatoes, carrots, and onion slices with diagonally sliced kielbasa. I usually put the potatoes slices on the bottom, then the carrot slices, then the onions and finally the kielbasa. I make individual packets for my husband and me...that way I can make a bigger one for him since his appetite is bigger than mine.

Dot with butter generously and sprinkle with salt and pepper. Fold up the packets tightly, leaving a little extra room for expansion.

Grill on direct medium heat for 45 minutes, with the grill cover down, turning several times - but keep the potato side down a little more of the time so the kielbasa won't burn.

Poke a knife through the foil into the vegetables to test them. Packets are done when vegetables are tender.

I like the meat and vegetables well cooked - browned and crusty...even a little charred on the edges. We each open our packets - Watch out for the steam! - and slide everything onto our dinner plates! We LOVE this meal!
