Ingredients
- 4 baking potatoes
- 1 lb ground beef
- 1 onion, chopped
- 1 pkt (1.25oz) taco seasoning
- 8 oz shredded cheddar
- Salt & pepper to taste
- Ranch dressing

Step 1
Heat oven to 375. Prick washed potatoes with fork. Microwave for 8 minutes or until soft enough to scoop out. Meanwhile in skillet, cook beef until browned. Drain; add onion and 1 tblsp of the taco seasoning and cook 5 minutes. Scoop out potatoes. Place in bowl; set skins aside. Mash potatos and stir in beef mixture,cheese, salt, pepper and remaining taco seasoning. Spoon mixture into skins. If you have too much, bake extra in a small casserole. Place filled potatoes in a casserole dish and bake for 15 minutes. Serve with Ranch dressing.
