Walnut-Crusted Spagetti Squash

Ingredients

  • 1 spagetti squash
  • 2 t olive oil
  • salt and pepper
  • 2 scallions, sliced
  • 2 T walnuts, broken into small pieces

Step 1

Prick squash in several places and wrap in paper towel. Microwave on high power for 5 minutes. Remove, let rest a minute and cut in half lengthwise. Scrape out seeds with a spoon and discard.

Scrape out the flesh with a fork and place in a microwave safe bow. Add olive oil and salt and pepper to taste. Microwave on high 2 minutes. Remove and stir in scallions. Sprinkle walnuts on top an serve.
