  • 1/4 cup yellow cornmeal
  • 1/4 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp sugar
  • 1/4 cup skim milk
  • 1 TB egg substitute
  • 1 1/2 tsp vegetable oil
  • Vegetable cooking spray

Preparation

Step 1

Combine first 4 ingredients in a medium bowl; make a well in center of mixture.

Combine milk, egg substitute, and oil; add to cornmeal mixture, stirring just until dry ingredients are moistened.

Pour batter into a 7 1/2 x 3 x 2 inch loafpan coated with cooking spray. Bake at 400 for 10 to 12 minutes or until lightly browned. Let cool in pan on a wire rack.

Yield: 1 (7 1/2 inch) loaf.
