Penne with broccolirabe

  • 1 bunch broccoli rabe
  • 1 package whole wheat penne
  • 1 T. olive oil
  • 4 lean turkey sausage, casing removed
  • 1/2 md. red onion, thinly sliced
  • 1 garlic clove, sliced
  • pinch red pepper flakes
  • 2 T. tomato paste
  • 1/4 c. skim ricotta
  • 2 T. grated parmesan

Step 1

1) bring pot of salted water to boil. add broccoli rabe; cook 4 minutes and transfer to colander. when cool enough to handle, chop into bite sized pieces

2) add penne to same pot of boiling water and cook til al dente. reserve 1/2 c. of pasta water before draining pasta

3) meanwhile, heat olive oil in skillet over md high heat. add sausage, onion, garlic and red pepper. cook, crumbling the sausage with wooden spoon, until browned, about 8 minutes. add chopped broccoli rabe and saute til tender, about 2 minutes. add tomato paste and cook, stirring well til combined, about 1 minute

4) adjust heat to low and add pasta to skillet. toss to combine, adding reserved pasta water if mixture is dry. stir in ricotta and parmesan, take off heat, toss, serve asap
