Pasta with Italian sausage and Cheese

Ingredients
- 2 TBSP butter
- 1/2 cup chopped onion
- 2 TBSP all purpose flour
- 2 cups milk
- 1 1/2 cups shredded provolone or old cheddar cheese, (6oz./170g)
- 1/2 lb hot or sweer Italian sausage, cooked and sliced
- 2 TBSP tomato paste
- 1 TBSP fresh chopped parsley
- hot cooked penne or similar shaped pasta

Step 1
Melt butter in medium saucepan; saute onion until tender.
Blend in flour, gradually stir in milk.
Cook and stir over medium heat until mixture boils and thickens.
Remove from heat.
Add cheese; stir until melted.
Stir in sausage, tomato paste and parsley.
Reheat if necessary; do not boil.
Serve sauce over hot cooked pasta.
Garnish with crushed chillies if desired.
