Spinach Mushroom Tart

Ingredients
- 1/2 c. chopped onion
- 8 oz. sliced mushrooms
- 10 oz. package of frozen spinach
- 1 c. egg substitute
- 1 c. skim milk
- 1 c. low-fat shredded cheese
- 1/3 c. Parmesan cheese
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 tbsp. bread crumbs

Preparation
Step 1
Saute together 1/2 c. chopped onions, 8 oz. of sliced mushrooms, and 10 oz. package of frozen spinach, thawed and squeezed dry.
Mix 1 c. egg substitute, one c. skim milk, 1 c. low-fat shredded cheese, 1/3 c. Parmesan cheese, salt, and pepper.
Coat the bottom and sides of a cake pan with non-stick spray, and sprinkle with 2 tbsp. of bread crumbs. Combine vegetables with egg mixtures and pour into pan.
Bake at 350 for 45 minutes.
