Sweet Potato casserole

*If you don’t like sweet potatoes, give this recipe a try. This is the only sweet potato recipe I can make at the holidays that my husband will eat. He just loves it and the leftovers are great too*

Ingredients
- 5-6 lbs Sweet potatoes
- 3 eggs
- ¼ cup sugar
- ½ cup melted butter
- ½ cup heavy whipping cream
- 1 tsp vanilla
- ¼ cup bourbon (optional)
- Topping
- ½ cup butter
- 1 cup chopped pecans
- 1 cup brown sugar
- 1 cup flour

Preparation
Step 1
Peel and boil sweet potatoes, in large bowl add all remaining ingredients and whisk together, Add potatoes and with mixer whip together. Grease 13 x 9 deep baking dish with butter or cooking spray (butter makes it taste better). Add ingredients to baking dish.
In separate bowl, add all ingredients for topping and mix until it becomes a crumb like consistency. Sprinkle on top of casserole and bake at 350 degrees for 40 minutes.
