Potato Latkes

  • 3 Lg potatos - peeled and cut into chunks
  • 1 med. onion - cut into chunks
  • 2 egg
  • 3 rounded Tbsp flour
  • 1 tsp baking powder
  • Salt & pepper to taste
  • canola oil

Preparation time 15mins
Cooking time 45mins


Step 1

In a food processor or blender, blend all ingredients, except the oil, until smooth.
Pour oil into an electric skillet to about an 1/8 inch deep and heat to the highest setting (400 degrees). Fry 1/8 cup spoonfuls of batter until golden brown. Cool latkes on paper towels to drain some of the oil before eating. Serve with toppings of choice, such as applesauce, sour cream, or even raspberry habanero jelly.
