Cruchy apple nut pancakes

  • 2 servings instant mashed potato flakes
  • water
  • 2 eggs
  • 1 tsp. sugar
  • 1/4 tsp. ground cinnamon
  • 1/2 C. chopped apple
  • 2 T. chopped pecans
  • reduced fat sour cream or applesauce optional

Step 1

1) omitting butter and salt, prepare the potato flakes with water according to package directions.

2) in md. bowl, beat together eggs, sugar and cinnamon until well blended

3)beat in potatoes

4) stir in apple and chopped pecans

5) spoon 1/3 c. batter onto hot, lightly greased griddle (380 if electric griddle)

6) cook both sides til golden brown

7) serve hot plain, with sour cream or applesauce
