Ingredients

  • 1 T unsalted butter
  • 3 medium garlic cloves, minced or pressed; about 1T
  • 1 t chopped fresh thyme
  • 1 t EVO
  • 1 pound green beans, trimmed and cut
  • Salt and pepper
  • 1/4 c water
  • 2 T fresh lemon juice
  • 1 T chopped fresh parsley

Step 1

Combine butter, garlic and thyme in a bowl. Set aside. Heat oil in skillet over med heat till smoking. Add beans, 1/4 t salt and pepper. Cook stirring occasionally till spotty brown about 4-6 min. Add water, cover and cook till beans are bright green and still crisp, about 2 min. Remove cover, increase heat to high & cook till water evaporates about 30-60 sec. Add butter mixture and continue to cook, stirring frequently until beans re crisp tender, lightly browned and beginning to wrinkle slightly. Transfer to bowl , toss with lemon juice and parsley. Serve.
