Bacon and Dried Tomato Scones

Ingredients

  • 3/4 c dried tomatoes, NOT oil packed
  • 1 T baking powder
  • 2 1/2 c flour
  • 1 t dried basil
  • 1 t dried oregano
  • 1/2 t garlic salt
  • 3/4 cup butter, in small pieces
  • 8 slices bacon, cooked and crumbled
  • 1/4 c sour cream
  • 2 eggs, lightly beaten
  • 2 T milk
  • 1/2 c shredded mozzarella cheese

Preparation

Step 1

400 degree oven. Let tomatoes stand in bowl of water for 5 minutes. Drain and chop. In large bowl, combine flour, baking powder, basil, oregano, garlic salt. Cut in butter to course. Stir in tomatoes and bacon. Make well in center of flour mix and set aside. In small bowl combine sour cream, eggs and milk. Add all to flour mix. Stir with fork to just moistened. Turn onto floured surface. Knead 10-12 times. Divide in half and roll each into circle. (7"). Cut each circle into 8 wedges. Place 2 ' apart on baking sheet. Bake 5 minutes and then top with cheese sprinkles. Bake 7-8 minutes more. Serve warm.
