Ingredients

  • 6 Peaches (pitted and sliced)
  • 1/4 cup Brown Sugar
  • 1 /4 cup Water
  • 1 tablespoon Cornstarch
  • 1/4 teaspoon Cinnamon
  • 1/3 cup Coconut Oil
  • 1/2 tablespoon honey
  • 1 cup Quinoa (cooked )
  • 4 packages Stevia packets (like you would put in coffee)
  • 1 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/4 cup Vanilla Almond Milk (or sub regular milk)
  • 1/4 cup Key Lime Greek Yogurt (I used Chobani)
  • 3/4 cups Whole Wheat Pastry Flour

  • SERVES 4 (Baked for 30 minutes)

Preparation

Step 1

1. Preheat oven to 400 degrees.

2. In a medium saucepan, combine sliced peaches, brown sugar, and water.  Simmer over medium heat for 8 minutes. Add cornstarch and cinnamon to peach mixture. Stir thoroughly.

3. In a medium mixing bowl, combine remaining ingredients (coconut oil through flour)

4. Spray a deep baking dish with non-stick spray. Spoon in the dough and press it flat. Pour the peach mixture on top.

5. Bake for 45 minutes or until everything is cooked through. Serve with a scoop of vanilla ice cream (optional, though recommended!)
