Marinated Shrimp (Janis)

Ingredients

  • 3 lb. shrimp, cooked and deveined
  • 1 small jar capers, drained (optional)
  • 2 small (I used 1 large and it was plenty) onions, thinly sliced and separated into rings
  • ¾ cup tarragon vinegar
  • ½ cup salad oil
  • 2 dashes garlic powder
  • 1 T. sugar
  • 2 T. water
  • ½ t. salt
  • dash of pepper
  • dash of Tobasco

Preparation

Step 1

Prepare marinade by combining all ingredients except shrimp, capers and onions. Immerse shrimp, capers and onions in marinade. Cover and refrigerate at least 24 hours, mixing periodically. Serve drained on a bed of chilled parsley either with or without sauce.
