Butternut Apple Casserole

Ingredients
- 1 butternut squash, peeled, seeded and cut into chunks
- 3 medium apples, cored, peeled and sliced (e.g., Granny Smith)
- 1 Tbsp lemon juice
- 3/4 tsp ground cinnamon
- 1 Tbsp brown sugar
- 1/2 cup apple juice

Preparation
Step 1
Preheat oven to 350 degrees. Coat the inside of 1 qt. casserole with cooking spray
Combine squash and apples with lemon juice and cinnamon in a large bowl. Toss to coat well and put in casserole.
Sprinkle with brown sugar. Pour apple juice over mixture.
Cover casserole with lid or foil and bake 1 hour or until squash is tender.
