Bacon Wrapped Stuffed Chicken

  • 8 slices bacon

  • 1 onion, finely chopped

  • 1 rib celery, finely chopped

  • ½ red bell pepper, chopped

  • 4 ounces shrimp, peeled and deveined

  • 1 cup crumbled cornbread

  • salt and pepper

  • 4 skinless boneless chicken breasts


Cook bacon halfway. Transfer to paper towel to drain. Add the onion, celery, and bell pepper to the skillet and coo for 3 minutes. Stir in shrimp and cook until opaque, 2 minutes. Stir in cornbread; season with salt and pepper. Cut a 2 inch wide slit through the cennter of the chicken breast. Fill each with one-quarter of the stuffing; press the opening to seal. Wrap each breast with two slices of bacon, secure with toothpicks. Cook chicken in skillet until bacon is crisp and chicken is cooked through.
