Turkey Soup (leftover Thanksgiving turkey)

Ingredients
- 1 lg. onion, chopped
- 3 sticks celery, cut into 1/4" pieces
- 6 Tbsp. butter
- 6 Tbsp. flour
- 1 tsp. salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1/2 tsp each - thyme, savory & parsley flakes
- 1 1/2 cup milk
- 4 cups cubed cooked turkey
- 5 med. carrots, cut into 1/4" pieces
- 1 to 2 cups turkey or chicken broth
- 1 pkg (10 oz) frozen peas

Preparation
Step 1
In large kettle, saute onion & celery in butter until tender, about 10 min. Stir in flour & seasonings, gradually add milk. Bring to a boil, cook and stir for 2 min. or until thickened. Add turkey & carrots.
Add enough broth until soup is at desired consistancy.
Cover and simmer for 15 min. then add peas.
Cover and simmer for 15 more min.
