Ingredients

- 7 tbls. cornstarch
- 1 1/2 cups sugar
- 1/4 tsp. salt
- 1 1/2 cups hot water
- 3 egg yolks beaten
- 1/2 cup lemon juice
- 1 tsp. lemon peel
- 2 tblsp. butter
- 2 pies

- 6 egg yolks beaten
- 1 cup lemon juice
- 2 tsp. lemon peel
- 4 tbls. butter

Cooking time 10mins
Preparation
Step 1
Mix first four ingredients, cook 6-8 minutes stirring constantly until thick and clear. Remove from heat. Add 1/4 cup to the egg yolks, mix and put back into pan. Cook about 6 minutes more, stirring constantly on low heat. Remove from heat, add butter, juice and peel. Stir well and pour into cooked crust.
MERINGUE
3 egg whites
1 tsp. lemon juice
6 tbsp. sugar
Beat whites and juice until soft peaks form. Add sugar and beat until stiff. Bake at 350* 15-20 min. to brown meringue. cool and refrigerate
