White Cheddar and Garlic Mashed Potatoes

Ingredients

  • 1 pound potatoes (your favorite)
  • 1 head garlic (peeled)
  • 2 tablespoons unsalted butter (room temperature)
  • 1/2 cup low-fat sour cream
  • 1/4 cup heavy cream
  • 1/2 cup white cheddar cheese (grated)
  • salt and pepper to taste

Preparation

Step 1

1. Boil the potatoes and garlic until the potatoes are fork tender, about 20-30 minutes.
2. Drain the potatoes and garlic and mash.
3. Mix in the butter, sour cream, heavy cream and cheese.
4. Season with salt and pepper.
