Pear Pie with Caramel Sauce

Ingredients

  • Sauce:
  • 2/3 c flour – divided
  • ½ c sugar
  • ½ tsp ground cinnamon
  • 1/8 tsp salt
  • 3 T fresh lemon juice (1 lemon)
  • 6 medium firm pears, peeled, cored and cut lengthwise into ½ inch wedges
  • 1 package refrigerated pie dough
  • Cooking spray
  • 1/3 c packed brown sugar
  • 1/3 oatmeal
  • 3 T chilled butter
  • 1/3 c packed brown sugar
  • 3 T heavy whipping cream
  • 2 T butter, softened
  • 2 tsp water

Preparation

Step 1

1. Preheat oven to 374 degrees.
2. Combine 1/3 c flour, sugar, cinnamon, and salt on large bowl. Add pears and lemon juice and toss gently to coat.
3. Roll out pie dough (it needs about 30 minutes at room temp to soften up) and fit into a 9” pie plate coated with cooking spray. Fold edges under.
4. Arrange pear mixture in pie plate.
5. Combine 1/3 c flour with 1/3 c brown sugar and 1/3 oatmeal. Cut in butter with pastry blender or two knives till mixture resembles coarse meal. Sprinkle butter mixture over pears.
6. Bake at 375 for 1 hour or until lightly browned.
7. For sauce, combine 1/3 brown sugar and 3 T whipping cream with butter in small saucepan. Bring to a boil and cook 1 minute or until thickened. Remove from heat and stir in 2 tsp water.
