  • 6 chicken breast, no skin, no bone,
  • 1/4 cup Dijon mustard
  • black pepper
  • 18 slices bacon
  • fresh chives snipped

Preparation

Step 1

Spread both sides of chicken breasts with mustard and season with black pepper.
Take 3 slices of bacon, sfretchlhem with (he back of a knife, and arrange them on a plate side by side and slightly overtopping. Wrap a chicken breast with
the bacon and use a toothpick to secure.
Place Ihe chicken breasts in a roasting pan, and bake in a 375 degrees oven for 25-30 minutes, until the slices of bacon are crisp and brown and the
chicken cooked through. Serve immediately, garnished with snipped fresh chives.
May substitute Dijon mustard with coarse mustard.
