Yellow Split Pea Soup with Canadian Bacon (slow cooker)

Ingredients

  • water 8 cups
  • split peas 1 package (1 pound) dried yellow , sorted and cleaned
  • carrots 3 mediums , diced (1 1/2 cups)
  • onion 1 medium , chopped (1/2 cup)
  • celery 1 medium stalk, chopped (1/2cup)
  • canadian bacon 1 cup diced , (5-ounce)
  • salt 1 teaspoon
  • thyme 1 teaspoon dried leaves
  • rosemary 1/4 teaspoon dried leaves, crumbled
  • pepper 1/4 teaspoon

Preparation

Step 1

In 3 1/2- to 4-quart slow cooker, mix all ingredients.
Cover and cook on low heat setting 8 to 10 hours or until peas and vegetables are tender.
Place 2 cups of the soup in blender or food processor.
Cover and blend on medium speed until smooth pour into bowl.
Repeat with 2 more cups soup.
Stir all blended soup into soup in slow cooker.
