Banana Muffins with Mascarpone Cream Frosting

Ingredients
- 3 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 2 cups sugar
- 1 cup vegetable oil
- 3 large eggs
- 1 tbsp vanilla extract
- 4 ripe bananas, peeled and coarsely mashed
- FROSTING;
- 1 (3-oz0 package cream cheese, at room tempterture
- 6 tbsp (3/4 stick) unsalted butter, at room temperature
- 1/3 cup mascarpone cheese, at room temperature
- 3 tbsp honey
- 1/2 cup chopped walnuts, toasted

Preparation
Step 1
Line 18 muffin cups with paper liners. Preheat oven to 325 degrees.
Whisk flour, baking soda, salt, baking powder,cinnamon and nutmeg in medium bowl to mix.
Beat sugar, oil, eggs, and vanilla in large bowl. Stir in bananas. Add dry ingredients and stir just until mixed.
Divide batter among muffin cups. Bake on middle oven rack just until tops are golden brown and tester inserted in center comes out clean, about 25 minutes.
Transfer muffins to rack and cool slightly.
FOR FROSTING: Using electric mixer, beat cream cheese and butter in a large bowl until light and fluffy. Beat in mascarpone cheese, then beat in honey. Spread frosting over muffins. Sprinkle wih walnuts.
May be cooled completely and frozen./
