Ingredients

  • 6 medium size tart green apples
  • Juice from half a lemon
  • 4 cups Kashi Good Friends cereal
  • 1 cup honey
  • ¾ c orange juice
  • Cinnamon
  • Non-stick cooking spray

Preparation

Step 1

Preheat oven to 375.
Spray large oblong baking pan with nonstick cooking spray.

Pare and slice apples thinly. Drizzle with fresh lemon juice.
Spread half of the apple slices into the pan and sprinkle with cinnamon.

Cover apples with half (2 cups) of the Kashi cereal and evenly drizzle half of the honey (1/2 cup) on top. Cover with the remaining apples and Kashi cereal. Drizzle with remaining honey and pour the orange juice on top.

Bake 40 – 45 minutes. Cover with foil if it crisps too quickly.

Variations: Add raisins or cranberries along with the apples.

1/8 = 250 cal, 1 g fat, 7 g fiber.
