Ingredients

  • 1/4 cup mayonnaise
  • 1 Tbs white vinegar
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 2 cups packed angel hair coleslaw
  • 3 medium green onions, chopped
  • 2 Tbs chopped fresh cilantro
  • 1 pouch cornbread and muffin mix
  • 1/2 cup shredded sharp Cheddar cheese
  • 1/2 cup buttermilk
  • 2 Tbs butter or margarine, melted
  • 1 egg
  • 1/2 lb shredded smoked pork
  • 1/2 cup bbq sauce

Step 1

In medium bowl mix mayonnaise, vinegar, salt and pepper. Stir in coleslaw, onions and cilantro. Cover, refrigerate until serving time.
Heat oven to 400. Spray 12 regular size muffin cups with cooking spray. In medium bowl, stir muffin mix, cheese, buttermilk, melted butter and egg just until moistened (batter will be lumpy). Spoon batter into muffin cups, filling each about 1/2 full.
Bake 10-12min or until golden brown. Immediately remove from pan to cooling rack. Cool completely about 15min.
In medium microwavable bowl, mix pork and bbq sauce. Microwave uncovered on high 1-2min or until heated. Cut muffins in half horizontally. Divide pork mixture among muffin bottoms; top with coleslaw. Cover with muffin tops.
