Italian Sausage & Bell Pepper Paella

Ingredients

  • 4 Links Hot &/or Sweet Italian Sausage
  • 2 Red Bell Peppers, cut into 1/2" wide strips
  • 1 Green Pepper, cut into 1/2" wide strips
  • 1 Med Onion, cut into 1/2" wedges
  • 1 Tbsp. Olive Oil
  • 11/2 C. Arborio Rice
  • 1 C. Dry White Wine
  • 2 C. Drained Canned Tomatoes, chopped coarse
  • 3 C. Water
  • 1 Tbsp. Sugar

Preparation

Step 1

Preheat oven to 400F. Squeeze sausage meat from casings into lg. skillet. Add peppers, onions & oil. Cook mixture over moderately high heat, breaking up sausage with a fork & stirring occasionally, 5 min., or till vegetables begin to brown. Add rice & saute 1 min, stirring, 1 min. Stir in wine, tomatoes, sugar & water & bring to a boil, stirring to loosen brown bits. Transfer to casserole dish & bake, uncovered 25 min., or till most liquid is absorbed. Season with salt & pepper.
