Chicken with Orange-Chive Butter

A very tasty way to cook chicken on the grill. The butter looks great on the chicken. Great for entertaining.
Ingredients
- 8 chicken thighs
- 1/2 c orange juice
- 1 teas ground black pepper
- 2 teas sesame oil
- Orange-chive butter
- 1/3 c butter
- 1 teas finely grated orange rind
- 1 teas finely chopped chives
- 1 T orange marmalade
- salt to taste

Preparation
Step 1
Place the chicken in a shallow glass dish. Combine juice, pepper, and oil in a bowl and pour over the chicken. Cover with plastic wrap and refrigerate for at least 2 hours, turning occasionally. Drain chicken and reserve marinade. Place chicken on lightly greased grill and brush occasionally with reserved marinade. Serve immediately with Orange-chive butter.
To make the butter:
Take softened butter and put in a mixing bowl. Beat with a wooden spoon 1 minute until creamy. Add the remaining ingredients and mix well until combined.
Place the butter on a sheet of plastic wrap and shape into a log. Roll up lightly and refrigerate until needed. When ready to use slice and place on top of the chicken.
